Anti-Inflammatory Cod Fillet

  • 1/4 Cup Olive Oil
  • 1/2 Teaspoon Turmeric
  • 1/4 Teaspoon Red Pepper Flakes
  • 3-4 Cod Fillets
  • 1 Cup Parsley, coarsely chopped
  • 1/4 Cup White Wine
  • 1 Lemon

Warm olive oil and spices in a large skillet over low heat for 2 minutes. Add cod fillets to skillet. Increase the heat to medium and gently cook the fillets for 5 minutes. Carefully turn the fish and add 1 cup coarsely chopped parsley and cook another 4 minutes. Add the wine, cover and simmer for 10 minutes. Squeeze on some fresh lemon and serve.
