“In a Pinch” Pizza
This is a great recipe to make for lunch or dinner when pressed for time. Pair with a side salad to complete the meal.
- 1 Loaf Crusty Bread – choose from Whole Wheat Ciabatta, Italian, or other similar style
- 1 Can Tomato Paste
- 1 Tomato, chopped
- 1/2 Cup Steamed or Sautéed Vegetables like Broccoli, Cauliflower, or Peppers (Use left-over cooked veggies when possible to save on time.)
- 1/2 Cup Cheese (choose low-fat or vegan)
- Pinch of each spice – Turmeric, Basil, Oregano, Ground Pepper
- 2 Tablespoons Olive oil
Slice bread lengthwise. Spread tomato paste on each half of bread. Top with tomatoes and other cooked veggies of choice. Top with cheese and spices. Drizzle with oil so cheese does not burn. Place on cookie/baking sheet and set broiler on low. Broil for 3-5 minutes or until lightly browned. Cool and slice. Makes 2 servings.
Pro-Tip: When cooking for dinner, keep the week ahead in mind. Make enough to have a next day lunch or a next night dinner. Cook a medley of vegetables so you have them on hand to add onto recipes. Keep mixed greens, avocadoes, cucumbers, and tomatoes in your refrigerator bin for quick salad options.
