Mason Jar Salad

Use a 1 pint (16 ounces) or 1 quart (32 ounces) mason jar with a 3 inch wide mouth and a lid.

Layering order should be dressing added first on the bottom then a protein or grain followed by other choice ingredients and topped with the green leafy’s.

Can shake and eat right out of the jar or pour and stir into a bowl.

Shelf-life is usually 4-5 days refrigerated.

Healthy Jar Salad

3 Tablespoons Dressing (green goddess, ranch, or olive oil & vinegar)

1/4 Cup Chickpeas

1/4 Cup Quinoa (cooked ahead)

1/4 Cup Sliced Bell Pepper

1/4 Cup Diced Cucumber

1/4 Cup Cherry Tomatoes

1 ½ Cups Leafy Greens (arugula, lettuce, or spinach leaves)
Layer a 1 pint mason jar with the ingredients (in the order listed) above. Seal it tight with the lid and refrigerate. Take it to go and enjoy.
