Pumpkin Pie
Try our healthier version of a traditional favorite~
- 1 Can Pure Pumpkin (15 ounces)
- 1 ½ Cups Almond or Soy Milk
- 2 Eggs
- ½ Cup Granulated Sugar
- 1 Teaspoon ground Cinnamon
- ½ Teaspoon Salt
- ½ Teaspoon ground Ginger
- ¼ Teaspoon ground Cloves
- ⅛ Teaspoon Nutmeg
- 1 Deep dish Pie Shell (9 inch)
Mix your dry ingredients-sugar and spices-in a small bowl. Lightly whisk eggs in a large bowl. Fold pumpkin in with eggs and then add sugar & spice mixture and stir together. Add milk in slowly to let the pumpkin mixture absorb it. Stir until completely mixed. Pour into your pie shell and bake in preheated oven at 425 degrees F for about 15 minutes. Then reduce oven temperature to 375 degrees F and continue baking for about 50 minutes or until pie is completely baked. (To test if it is done, insert the tip of a knife in center of pie; if it comes out clean it is done, if not continue to bake a few more minutes and test again until it is done.)
Cool for an hour and serve immediately or refrigerate. Enjoy!
