Sweet Potato Puree
Let’s get to the root of this vegetable. It is jam packed with nutrients including vitamins A and C, potassium, magnesium, and fiber, and is so versatile: you can roast, bake, boil, or puree. Try this recipe and get a little sweet potato in your day.
- 2 Large Sweet Potatoes, peeled and chopped into chunks
- 2 Tablespoons Honey (or pure maple syrup)
- 4 Tablespoons Olive Oil, divided
- 1/4 Teaspoon each of Salt and Pepper
- 1 Tablespoon Butter
- 1 White Onion, peeled and sliced
- 2 Tablespoons Hot Water
Place sweet potatoes, honey or syrup, 2 tablespoons of olive oil, salt and pepper in a large mixing bowl. Toss to evenly coat and place on a baking sheet. Roast at 400 degrees F for 25-30 minutes or until soft. In a medium saucepan, melt butter and the remaining 2 tablespoons of olive oil. Add sliced onion and sauté until golden brown, about 2-4 minutes. Place sweet potato mixture and caramelized onion mixture into a food processor or blender. Add 2 tablespoons of hot water and puree until smooth. Makes 4 servings.
